Beer Filtration

Beer is a kind of low-alcohol beverage full of carbon dioxide brewed by yeast fermentation, which is mainly made of malt, hops and water. The production process of beer is divided into several processes such as malt production, wort production, pre-fermentation, post-fermentation (also known as maturation), filtration sterilization and packaging. According to the industry development and consumer demand, it is mainly divided into: pasteurized beer, draft beer or fresh beer.

Pasteurized beer: pasteurization + sterilization filtration, can completely sterilize bacteria, but it has an impact on the taste of beer.

Draft beer: sterilization filtration, basically will not affect the aroma of the beer, whether packaging or transportation will significantly prolong the product quality stability period.

Fresh beer: without pasteurization or instantaneous high-temperature sterilization, the finished product is allowed to contain a certain amount of live yeast to achieve a certain biological stability of beer

With the increasingly fierce competition in the beer market and people’s higher and higher demand for beer quality, it has become very important to improve the quality of beer, among which, the filtration treatment of beer is the key. The beer production process inevitably contains some yeast body and trace amounts of protein and suspended particles of hop resin. Their existence not only affects the appearance and turbidity of the product, but also affects the biological stability and abiotic stability of the finished beer, colloid stability, so they must be removed by a filtration process.

The main filtration sites of the whole process are:

1. Raw material filtration: removal of particles in high viscosity liquids such as syrup, liquid sugar, additives

2. Respirator: balance tank pressure, prevent pollution

3. Gas sterilization filtration (air, CO2, N2, respirator): for compress air, N2, CO2 and other gases, remove moisture and particles in the gas to meet the requirements of sterile-grade

4. Gas pre-filtration (air, CO2, N2): remove most of the moisture particles and some bacteria in the gas, protect the downstream sterilization filter

5. Catcher: interception of particles shed by diatomaceous earth shedding and in beer

6. Sterilization pre-filtration: remove large particles and other impurities, protect the life of downstream sterilization filtration, and remove yeast to stabilize the beer quality

7. Sterilization filtration: completely remove yeast, spores, bacteria and other microorganisms to ensure long-term preservation quality of beer and control the risk of contamination

8. Steam filtration: remove steam particles and pipe rust and impurities
